The Sawyer at Schaffer's Mill

Located in the heart of the Pinyon Pine-Juniper woodland area of the Sierra Nevada’s, elevated at 5,817 feet in the town of Truckee, resides The Sawyer at Schaffer’s Mill. Heritage, history, and respect for those lumberjacks who came before is at the core of Schaffer’s Mill. Within that group, no one is more revered than the sawyer, an occupational term referring to someone who cuts and works with wood. With food true to the land and served by real Truckee people, The Sawyer is the perfect name for the final, most awaited addition to Schaffer’s Mill.

Embracing the surrounding views, The Sawyer is centered around an amazing indoor and outdoor bar with views of Lookout Mountain and the golf course. The restaurant features a locally crafted all-day menu with selections of shareable, freshly-prepared salads, generous sandwiches, and delicious entrees, all complemented by chef’s special features.

Chef Michael Capucetti

Affectionally known as “Chef Cappy,” The Sawyer’s Executive Chef wholehearted believes in using fresh local ingredients, and bringing passion, creativity, and luxury to his craft. Chef Cappy was inspired at an early age by his parents’ love for cooking. Learning in the family kitchen, he always knew that he wanted to pursue cooking as a life-long career. He attended Le Cordon Bleu in 2002. Upon graduation, he continued his education and culinary talent as a private chef in many kitchens in his hometown of Long Beach, California. With a wanderlust state of mind, Chef Cappy took his talents on the road and became a traveling chef on private yachts and long-range sportfishing boats for a significant part of his adult life. He then led the kitchens of some of the finest restaurants in Reno, Nevada. He settled down in Northern California, and in 2017, his talent was discovered by the Schaffer’s Mill team. He joined our family that year, as Executive Chef.

Chef Cappy is thrilled for this next chapter at Schaffer’s Mill, opening The Sawyer. His innovative and unique take on dishes will be sure to “wow” Members and guests alike.
